This dish is also available with Tomatillo sauce.
Another choice that I like is the Guacamole Taco ($8.89) without the cheese. This dish consists of two soft tacos stuffed with guacamole and lettuce. I know, it doesn’t sound very motivating. However, when I combined the rice, beans, tomatoes, onions, and jalapenos that came with my order, as well as a little chip salsa, and rolled it up, I was left with a delicious rice-and-bean burrito. I’m pretty sure that tasted better than the original “edition “As Big as Yo’ Head!”
Be mindful that your dishes come with both rice and beans on the side. (Servers at Chuy’s occasionally forget and only bring one of the two.)

The Refried Beans, on the other hand, are refried beans. muddled up With the Veggie Enchilada, I like the Charro Beans. Also, to go with my Guacamole Taco, I like to have Refried Beans.
Both of the rices available are vegan: Mexican Rice and Green Chile Rice. Green Chile rice is said to be hotter, however both alternatives are fairly mild.
Chuy’s is said to feature a fantastic happy hour (4:00 – 7:00 PM weekdays) with a variety of drinks “A nacho vehicle with a full complement of nachos.” I haven’t been to happy hour or tried any of the beverages, but if you do, you’ll appreciate Chuy’s spacious and spotless toilets.
Vegans on a budget should pick up a Frequent Fan Club card, which allows them to enjoy the sixth entree for free if they buy five.
Vegan Verdict: Chuy’s was a great experience for me! I’d love it if they added some vegan diversity and made at least one vegan sauce with a bit extra kick to it! However, the selections they do provide are delicious, and I can eat with confidence. When dining alone or with fellow vegans, Chuy’s will not be my first option, but I will happily dine there with my omnivore and vegetarian friends!
