What exactly is miso?

Miso is a fermented paste prepared by inoculating a mixture of soybeans with a mold called koji (for those of you who aren’t into science, that’s the common name for Aspergillus oryzae), which is cultivated from rice, barley, or soybeans. The enzymes in the koji work with the microorganisms in the environment to break down the structure of the beans and grains into amino acids, fatty acids, and simple sugars over weeks (or even years!).
