I chose to make a homemade version of Bufalo brand chipotle sauce because it simply has a few components. I used xanthan gum in my first attempt because the Bufalo brand had it. I knew I could do better than theirs, which turned out sticky and invariably clogged up the neck of the bottle.

During my second attempt, I ditched the xanthan gum and replaced it with potato starch. The texture was silky smooth, and it was simply amazing! I didn’t want to throw away the other. As a result, I blended the two. The texture remained excellent. In the future, I guess I’ll stick with the potato starch. My baked items include enough gum. I only use it when absolutely required.
