For this reason, you should not stick to the recommended salt amounts. But there’s a good possibility you will! You’ll notice that I don’t list salt quantities in practically any savory recipe on my site. If it’s necessary for a recipe, I’ll do it, but I try to avoid it for this reason. It gives me the creeps.

Diamond Crystal Kosher Salt is my preferred (and highly recommended) cooking salt. It is, in my experience, the only brand of salt used in most restaurants; chefs adore it, and that recommendation means a great deal to me.

I buy a 3-pound box every few months and don’t use anything else as long as I can get my hands on it. I’ll use sea salt or finishing salt (Maldon or Fleur de Sel) on occasion, but that’s it.

  • It’s ridiculously simple to pinch! I keep a little bowl of it next to my stove and use it to season everything. I strongly advocate eschewing the use of a salt shaker or grinder in favor of pinching and seasoning with your fingers as you go! This manner, you’ll be able to better regulate and modify the flavor of your dishes.
  • It dissolves quickly, sprinkles evenly, and adheres well to foods. You can physically ‘mill’ it finer with your fingertips to speed up the dissolving process. Salts that are easily dissolved should be used in cooking. To finish, use salts that are less easily dissolved (Maldon sea salt flakes or Fleur del Sel). However, I always use Diamond Crystal Kosher Salt as a finishing salt.
  • It’s the least dense kosher salt on the market, and it’s my personal favorite! With an extra pinch or two of salt, you won’t oversalt a dish.

While this is in no way an endorsement of one brand over another, I strongly encourage you to seek out and try Diamond Crystal Kosher Salt to see what you think. If you don’t, simply modify the salt quantity to accommodate for density, or don’t use salt as all.

In any case, I strongly advocate sticking to one sort of salt throughout your entire cooking process! If you alternate between sea salt, kosher salt, and table salt all the time, you’ll lose the intuition that comes with consistently utilizing one sort of salt. I’m so familiar with this brand’s relative’saltiness’ that I know just how much to use to get the amount of seasoning specified in a recipe.

Learning to season is similar to learning to ride a bicycle. It takes some time to figure out, but once you do, it’s second nature!
