The Two methods

Choice 1:

Although I am aware that cooking would get rid of or kill the bacteria, I would prefer that they not be there before the chickpeas are ground into flour.

However, this process is a super-fast way to make “instant” chickpea flour if you purchase organic chickpeas that haven’t been sprayed with any pesticides, etc.

Simply said, pound your chickpeas into a fine powder in a coffee/spice grinder or high-speed blender.

To get rid of any larger lumps, sieve the flour. You may then re-grind these lumps as well.

Once prepared, store your chickpea flour for up to two months in an airtight container.

Option 2 (the approach I favor):

Even though the hands-on time is nearly same, this alternative takes longer since it ensures that the chickpeas are cleansed and soaked before being dried and processed into flour. They can be processed quickly in a food processor or blender or ground into a fine flour in a spice mill.

To get rid of lumps, sieve the flour. You can then attempt to mill the larger particles once more. You’ll need to do this two to three tablespoons at a time if you’re using a grinder. It could take several rounds with either technique to finely grind all the chickpeas.

When done, transfer to a suitable airtight jar and preserve for up to two months.

Chickpea Flour Recipes/Uses

You can use your freshly manufactured chickpea flour in a variety of ways, such as as a simple gluten-free flour substitute, to thicken stews and curries.
