There’s no need to thaw when it’s time to use it: To peel (if desired), scrape with a spoon and then grate with a microplane. Toss it in stir-fries and soups, make tea with it, or bake with it to your heart’s want.
4. Bacon: We enjoy freezing bacon because, well, it’s BACON, but it also defrosts quickly at room temperature. Wrap individual portions (3-4 slices) of raw bacon on parchment paper or wax paper, then place them in a sealed freezer bag and freeze. (If you need to cut the bacon for a dish, do it while it’s still frozen.)
